Unfortunately, CD Projekt RED has released only very limited info on the ages of all the characters in Cyberpunk 2077. Nevertheless, I did my best to aggregate all the data at our disposal.

Hanako Arasaka was born to Saburo’s third and last wife, Michiko, on March 2nd, 1999.
Kerry Eurodyne’s website “Eurodyne” reveals that he was born in 1988.
*Update: the website doesn’t show his birth date, so his age is not confirmed.
Johnny Silverhand’s date of birth was shared on the Cyberpunk official Twitter: November 16th, 1988.
Peralez’s dossier in the Dream On job reveals their date of birth and height.
Elizabeth: April 10th, 2032 - 5’7” / 170 cm.
Jefferson: July 4th, 2031 - 6’1" / 185 cm.
Yorinobu Arasaka was born in Tokyo, Japan on September 8th, 1995.
V’s date of birth prior patch 2.0:
Male: June 10th, 2049.
Female: October 12th, 2049.
V’s date of birth after patch 2.0:
Male and Female: October 12th, 2054.
